Bready Cheesy Awesomeness

Ok, get ready. You might even want to sit down because I am about to change your life. I’m going to share with you a recipe whose ah-mazingness is only matched by Cayenne Candied Bacon. It comes from one Pioneer Woman {as many good recipes do}.

Now, I’m not typically one to mess with perfection but I did make a few changes to this one that seemed to work better for my taste.

Let’s talk about what you need to start with:
- 1 Loaf of Crusty French Bread (get the loaf and not the baguette)
- 3 Tbsp of unsalted butter
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 2 tsp Dijon mustard
- 4 ounces fat free cream cheese
- 4 ounces reduced fat cream cheese
- 2 cups shredded Cheddar cheese (I use Kerrygold Irish)
- Salt and pepper
- 2 egg whites, beaten to stiff peaks

First off, get your bread. {Bread purists, you are going to want to look away for a few minutes while I do this next step.} Take that beautiful loaf of crusty French bread and cut it into 1 inch cubes…you can eyeball it.

Now, melt the butter in your pan. Add the shallot and garlic and sauté. Mix in the Dijon mustard and then reduce the heat.

Cut your cream cheese up into slices, blocks or something smaller than the brick. Throw it in the pan and stir it until it is all melty {technical term there} and combined with the butter/shallot/mustard mixture.

Now, add the shredded cheddar cheese. Stir that until it melted and combined.

While I am stirring the cheese in, I typically throw my egg whites into the mixer (just to prove to Mathlete that I do more with it than shred chicken!) and get them going with the wire whisk.

Turn off your heat. Gently fold in your egg whites.

Ok, so are you a believer yet? No…I wasn’t either! We’ve still got a few more steps though.

Take your little bread pieces and dunk them in your cheese mixture. Make sure you coat them pretty well. Place them on a baking sheet covered in parchment paper.

Take these little pieces of bread gold and put them in the freezer for 20 minutes. {At the 20 minute mark, you can actually put them into a freezer bag and store them for later use!}

While you are waiting, preheat your oven to 375 degrees. Pull your bread from the freezer and, after your oven is preheated, put them in there to bake for 10-15 minutes. They’ll bubble a little and turn golden brown to let you know they are ready.

b) they went just a little too fast at said dinner party for me to score a picture.
