There has been so much basement work going on around here that I haven’t gotten many other projects done. I’ve still been cooking a bunch though.
For Teacher Appreciation Week, E’s school planned a dessert buffet for all the teachers. I made one of my mom’s favorite things: Chocolate Eclair Cake
I remember my mom making it all the time for potlucks and holidays. Of course, I grabbed my favorite little helper too
Let’s get the stuff together
You will need:
- Graham crackers
- 2 small packages of vanilla instant pudding
- 3 cups of milk
- 1 package of cool whip
…For the Frosting…
- 1/4 cup of milk
- 1/3 cup unsweetened cocoa powder
- 1 cup sugar
- 2 Tbsp butter
- 1 tsp vanilla extract
In a large bowl, mix the pudding mix and milk together.
You will want to keep stirring until you get a pudding consistency
I had my helper put a layer of graham crackers on the bottom of a 9×13 pan while I stirred.
Slowly fold the cool whip into your pudding mixture.
Spread half of the pudding mixture on top of the layer of graham crackers. Then, cover with another layer of graham crackers. Repeat with another layer of pudding and graham crackers.
Stick that in the fridge while you get ready to make the frosting. In a saucepan, melt the butter with the cocoa and sugar.
Bring it to a boil {stirring constantly} and let it boil for 1 minute.Whisk in the milk and vanilla. Remove from heat and spread over the top of the graham crackers.
Refrigerate for a few hours {or overnight} to let the chocolate frosting set.

I have made this before, but instead of the topping you used, I used a tub of chocolate icing. Stick it in the microwave for 30 seconds until it is melted and then pour it on top. Your’s probably tastes a little more home made, though…
