I know it isn’t quite Thanksgiving yet but I am already having dreams {nightmares?} about swimming in leftover turkey. No matter how well we plan, we always seem to have a ton of leftover turkey. This recipe is a great way to to use some of that leftover turkey. Another benefit: you can freeze it and use it later!
What You’ll Need:
2 cups cooked, chopped turkey breast
1 medium onion, chopped
1 clove of garlic, minced
2/3 cup picante sauce
1 tsp ground cumin
1/2 tsp salt
1 (15 oz) can diced tomatoes, drained
1 large zucchini, diced
1 (4 oz) can sliced black olives, chopped
2 cups shredded cheddar cheese
2 Tbsp cornstarch
1 frozen deep dish pie crust
Let’s Make It:
1) Preheat the oven to 375 degrees.
2) Combine the turkey, onion, garlic, picante sauce, cumin, salt, diced tomatoes, zucchini, olives and 1 cup shredded cheddar cheese in a large bowl. Stir well to combine.
3) Pour mixture into deep dish pie crust. Sprinkle with 2 tablespoons cornstarch and remaining 1 cup shredded cheese.
4) Bake in preheated oven for 20 minutes or until the cheese is melted and bubbly.
To Freeze:
If you want to freeze this for you use later, pour the mixture from step 2 above into a ziploc bag and freeze. Thaw in the refrigerator the day prior to cooking. Proceed with steps 3 and 4 once thawed.
