Superbowl Food: Buffalo Chicken Cups

Have you heard?  The Superbowl is this weekend!

I’m not a huge football fan but we are having a few friends over to watch the game.  {Mathlete can’t resist an opportunity to use the basement theater area!}

Of course, Superbowl Sunday means lots of tasty finger foods.  In addition to these tasty options, I’ve got a quick and easy one for you to make for your Superbowl event: Buffalo Chicken Cups.
Easy Buffalo Chicken Cups #appetizers #superbowl #recipes What You’ll Need:
- 2lbs boneless, skinless chicken breasts
- 1 1/2 cups hot sauce (I use Frank’s)
- 4 oz crumbled blue cheese
- 30 Filo Cups (find them in the frozen section)
- 1/2 cup ranch dressing

Let’s Make It:
1)  Start by cooking your chicken.  You can do this just about any way you want.  I cooked mine in the crockpot with a few stalks of celery, a handful of carrots and some water.
2)  Once your chicken is cooked, shred it.  I use my Kitchenaid mixer to shred mine super quickly and with no real effort.
3)  Mix the chicken with the hot sauce.

4)  Put a few pieces of the crumbed blue cheese in the bottom of each of the filo cups.

5)  Fill the cups with the shredded chicken mixture and then top with a drizzle of ranch dressing.
