We’re huge Mexican food fans in our house. Seriously, my kid eats guacamole by the truck load and we have at least one Mexican inspired dish on our menu every week. So, of course, we are super excited about Cinco de Mayo. The only bummer is that it is a Tuesday which means I won’t have time to put together a lot of stuff for our celebration. Thankfully, I know where to get delicious taquitos and tamales. Then, all I have to do is make a few delicious sauces and toppings so my family can make their own taquito platter. One of our favorite sauces is jalapeno kale dip which my kids think is just avocado ranch {and I am not tell them any different since the word kale would instantly get a disgusted face and rejection}.

Strawberry Goat Cheese Crostini

I love cheese. That doesn’t always marry well with my Paleo lifestyle but I do allow myself to indulge from time to time. One of my favorite cheeses is goat cheese. I love it in salads, pasta and so many other dishes too. I had some gorgeous, fresh strawberries recently and I was torn with what to do with them…besides eat them. I ended up making strawberry goat cheese crostini and it was the perfect Spring lunch.

Three Ingredient Lemon Cake Batter Dip

Any time a recipe starts with the phrase “three ingredients”, it makes my heart go pitter patter. I love cooking but I don’t always have the time to make the recipes I want because of the lengthy list of ingredients. Having an arsenal of recipes that don’t require many ingredients, like three ingredient TWIX dip, carrot cake dip or this lemon cake batter dip, makes it easy for me to still make something even when I am short on time.

We love hosting parties or just having people over to hang out at the last minute on a weekend. Whenever I have people coming over, I like to have at least a few snacks for them to eat while we talk or watch tv. One of the easiest things to serve is dip with either bread or chips. My newest favorite is triple cheese kale dip because, well, it has three cheeses in it. You can totally call it just kale dip though to make yourself think you are eating vegetables!

Dark Chocolate Sea Salt Caramelitas

So, you guys see me posting all the Paleo recipes and I’m sure you are sitting there thinking “well, she has gone full on health nut on us.” While I do try to stick to Paleo as much as possible, I admit that I still enjoy {love, crave, desire…} sweets on a regular basis. I just went from having them almost every day to saving them for more of a special treat. Now, these dark chocolate sea salt caramelitas…I could eat these every day. I’d need an entirely new wardrobe filled with elastic waist pants but they are so good that I would never tire of them.

Crockpot Paleo Chinese Pork

Each week, we usually end up with at least one crockpot meal on our menu. I’m gone during dinner time on both Tuesdays and Thursdays and I know that Mathlete isn’t going to want to put any effort into actually making a dinner when he gets home. So, I get up and prepare something that cooks all day and is ready when he is home. Since going paleo-ish, it has been a lot harder to find recipes we enjoy that also work in the crockpot. This crockpot paleo chinese pork that I made is definitely a winner though.
