School starts here on Monday! I am already in panic mode thinking about healthy breakfasts before school and packing lunches my kids actually want to eat. **I know we usually do Paleo Mondays but, to be honest, vacation kicked my butt! So, enjoy this delicious crostini recipe instead and we’ll get back to the paleo goodness next week!**

So, we totally buy our avocados at Costco. When you have a five year old who eats 1-2 per day, you need to buy in bulk. But, sometimes he just isn’t feeling it and we are left with a bunch of avocados and no idea what to do with them. We can only eat so much guacamole after all. I was having friends over recently and decided to put them to good use by making bacon avocado crostini.

One Pot Chicken and Kale

One pot meals are my favorite. They really make it easy to get dinner done without a lot of dishes to clean up in the aftermath. On a lot of weeknights, I end up being the one to get the dishes in the dishwasher so I appreciate any little bit of help I can get. My favorite dish right now is paleo one pot chicken and kale.

Easy Recipes Meal Planner – Week 6

Ok, you guys. It is meal planning time. We are inching towards the beginning of our school year plus getting ready to go on vacation so this week’s meal planner is heavy on the crockpot meals. Using the crockpot just makes things so easy. I also like using my slow cooker during the summer because it doesn’t heat up the kitchen on the steamy nights. Instead, I get a fix it and forget it meal that I can enjoy without our electric bill skyrocketing!
