Every year, I serve a similar menu for Christmas. Mathlete doesn’t love turkey so, after Thanksgiving, we don’t have that again until next Thanksgiving. I started making a beef tenderloin a few years ago and it is always a hit. For the days leading up to Christmas though, I like to have things that are sort of non-traditional so no one gets tired of sweet potato casserole, mashed potatoes or any of the other classic holiday dishes before Christmas ever even arrives. I was reading an article the other day called Peanut Butter Reimagined and loved the idea of using peanut butter in savory dishes. It has been cold and rainy here so Thai Sweet Potato Soup sounded like the best way to warm up.

If you follow me on Facebook, you’ve seen my saga of the broken oven. Just when we thought it was a glitch, the oven completely died. Of course, that happened 3 days from our annual holiday party which was totally stressful. I immediately had to rethink all of my holiday party recipes to limit how much of it needed oven time. That meant no cookies, puff pastries or anything like that. Instead, I decided to make the star of the dessert table chipotle chocolate truffles.

Peppermint Mocha Donut Recipe

When Mathlete and I were dating, I was totally addicted to Peppermint Mochas from Starbucks. Almost every date we went on either started or ended with a trip to Starbucks for my beloved drink. I don’t order the Peppermint Mocha as much during my trips to the coffee shop but I still love the flavor as much as I did way back then. I’ve been working on our Christmas menu and decided that I had to incoporate those favorite Christmas flavors in some how. Italian Meatball Soup

For years, we have always gotten together and decorated our Christmas tree with friends and family. I love sharing one of my favorite Christmas activities with those that I love. Every Christmas, I make a breakfast casserole. It is the perfect thing for us to let cook on Christmas morning while we gather around the tree see what Santa has brought. My favorite version is one that I can put together the night before and pop in the oven when I first wake up. As I focus on healthier choices, I find myself swapping out things like potatoes for sweet potatoes and skipping bread all together. Knowing I will be eating plenty of homemade donuts and chocolate fudge on Christmas day, I figure I should also have a healthier option like this paleo overnight breakfast casserole on hand as well.

Baked Eggnog Donuts

I am going to share a secret with you. I am not an eggnog fan. For whatever reason, I never really fell in love with it. I think eggnog is just like that annoying/endearing relative that you see every Christmas. You either LOVE him/her and think they are the most endearing person. Or, you have zero love for him/her and they become super annoying. I am in the zero love category when it comes to eggnog. I know it is like THE Christmas beverage but I just can’t fall in love with it. {I even tried making an eggnog candy to see if that would help.} Mathlete, on the other hand, is a major eggnog lover.
