Paleo Overnight Breakfast Casserole

Every Christmas, I make a breakfast casserole. It is the perfect thing for us to let cook on Christmas morning while we gather around the tree see what Santa has brought. My favorite version is one that I can put together the night before and pop in the oven when I first wake up. As I focus on healthier choices, I find myself swapping out things like potatoes for sweet potatoes and skipping bread all together. Knowing I will be eating plenty of homemade donuts and chocolate fudge on Christmas day, I figure I should also have a healthier option like this paleo overnight breakfast casserole on hand as well.

The perfect overnight breakfast casserole and it is healthy too!

When I joined the Cookie Exchange Blop Hop, I instantly knew my cookie would be some mixture of my two favorite holiday flavors and thus, peppermint chocolate cake mix cookies were born!

2014 Holiday Cocktail Party Blog Hop

Every year, we host a big Christmas cocktail party. I think about it all year and really put a TON of effort into putting it together. For me, party food has a few requirements: taste good, look good and be easy to eat without utensils.  It doesn’t hurt to be something that a lot of guests are at least mildly familiar with too.  When, I was prepping for an upcoming party, I was searching for things to make that I knew would be a hit and would also be easy to eat.  These spicy spinach artichoke stuffed mushrooms immediately came to mind.

Back in September, I quietly set about doing Whole 30 for the month. I post a few snippets here and there on Instagram but I definitely wasn’t shouting to the world that I was immersed in a whole month of new eating habits. During the month, I craved granola because I could no longer have my delicious granola bars that had become snack staples in my life. Of course, being September, I needed pumpkin too so this paleo pumpkin granola was born.

The most delicious homemade pumpkin granola and it is paleo too! Totally Whole 30 compliant.
