**I know we usually do Paleo Mondays but, to be honest, vacation kicked my butt! So, enjoy this delicious crostini recipe instead and we’ll get back to the paleo goodness next week!**

So, we totally buy our avocados at Costco. When you have a five year old who eats 1-2 per day, you need to buy in bulk. But, sometimes he just isn’t feeling it and we are left with a bunch of avocados and no idea what to do with them. We can only eat so much guacamole after all. I was having friends over recently and decided to put them to good use by making bacon avocado crostini.

BLT Bruschetta

Hey y’all! It’s me again, Allyson from Domestic Superhero, with a fun recipe for BLT Bruschetta for all of Shannah’s readers!

Creamy BLT Bruschetta - only a handful of fresh ingredients and seriously delicious!

Now, this recipe was kind of thrown together last minute, and then I started wondering why I didn’t think of it before. I mean, everyone goes crazy over bacon, and this spin on traditional bruschetta is just so easy and tasty! The sauce here is clutch, too, because it really brings all the ingredients together. The juicy tomatoes (Shannah’s favorite!), crispy bacon, and cool lettuce just make this BLT Bruschetta incredibly delicious. Then, you put it on top of a crunchy toasted slice of baguette and dress it with a cool tangy sauce – BAM – the perfect appetizer!

I have a GIANT sweet tooth. Like I think my whole mouth is nothing but sweet teeth because I crave sweets all the time. My children, especially my daughter, definitely inherited my loves of sweets. Tropical Guacamole

I have probably mentioned before that my four year old is totally obsessed with guacamole. If you have met us in person, you know it is quite the spectacle. He will eat guacamole {or more recently just plain avocados} every day if given the change. I love guacamole myself but not quite that much! I’ve been trying to change it up for him from time to time and recently made a tropical guacamole that he absolutely loved!

Strawberry Goat Cheese Crostini

I love cheese. That doesn’t always marry well with my Paleo lifestyle but I do allow myself to indulge from time to time. One of my favorite cheeses is goat cheese. I love it in salads, pasta and so many other dishes too. I had some gorgeous, fresh strawberries recently and I was torn with what to do with them…besides eat them. I ended up making strawberry goat cheese crostini and it was the perfect Spring lunch.

Three Ingredient Lemon Cake Batter Dip

Any time a recipe starts with the phrase “three ingredients”, it makes my heart go pitter patter. I love cooking but I don’t always have the time to make the recipes I want because of the lengthy list of ingredients. Having an arsenal of recipes that don’t require many ingredients, like three ingredient TWIX dip, carrot cake dip or this lemon cake batter dip, makes it easy for me to still make something even when I am short on time.
