I love trying new foods. I grew up in a really small town where the local Chinese joint was considered “exotic.” When I moved into a larger city with access to all kinds of cuisine, I really embraced them all and spent quite a bit of time trying all the different restaurants. One that I hadn’t had before and really wanted to try before was Malaysian cuisine. I couldn’t find a local restaurant to try easily so I thought I would attempt to make a dish at home inspired by the flavors of Malaysia. These Malaysian Chicken Meatballs were the result of some experimenting and I absolutely love how they came out.

Layered Mediterranean Dip

Let’s talk party food. I love parties and I love food even more so I am always the first one at the food table. One thing I look for is a yummy dip that I know I can keep coming back to! This layered Mediterranean dip would totally be the dip bowl I stood next for the entire party.

Every year, after we’ve recovered from the holidays, Mathlete and I start talking about what our next social event is going to be. Sure, my birthday is in early February but we usually like to have a low-key get together at our house before then. The logical choice is a party to watch the Big Game since a) we love football and b) it is the first major social event of the year. He  is in charge of TV stuff and I am in charge of food. Because everyone is so interested in the plays being made on the field, it can be hard for the food to get much attention. So, I wanted to wow everyone with some delicious food and started off with double chocolate SNICKERS® brownies.

It is no secret that I am a HUGE fan of Thai food. From Thai Butternut Squash soup to a host of other things, we eat Thai inspired dishes a lot in our house. Mathlete spends a lot of time begging me to make/eat something other than Thai inspired dishes. If you follow me on Facebook, you’ve seen my saga of the broken oven. Just when we thought it was a glitch, the oven completely died. Of course, that happened 3 days from our annual holiday party which was totally stressful. I immediately had to rethink all of my holiday party recipes to limit how much of it needed oven time. That meant no cookies, puff pastries or anything like that. Instead, I decided to make the star of the dessert table chipotle chocolate truffles.
