A Busy Mom’s Lunch: Slow Kettle Soup

Lunch is one of those meals that I rarely get to eat. Either I am too busy at work or I am chasing after my two littles and suddenly lunchtime is long past. I’ve been trying to get better about making sure I take time to eat lunch so I am less likely to snack late in the day and mess up my dinner though. I work in an office that is pretty far from any lunch options so I always take my lunch when I am in the office and I’ve started setting a timer for the days that I work from home. Recently, I discovered Campbell’s Slow Kettle soups and they have been the perfect lunch option for me!

Green Chile Pumpkin Soup

It took me a little longer to really get into pumpkin foods this season but once I did…I really got INTO pumpkin. There was pumpkin hummus, pumpkin queso, pumpkin cookies and now I give you the most delicious soup you will ever make with pumpkin: green chile pumpkin soup.

I love using pumpkin in savory dishes and this green chile pumpkin soup is so delicious. It is the perfect fall soup recipe.

TBT – Thai Butternut Squash Soup

Once October hits, I am a huge soup fan. I eat soup at least a few times a week between lunches and dinners. While I love broth based soups like vegetable quinoa soup and spicy sausage and tortellini soup, my absolute favorite to this day remainds Thai butternut squash soup. Back when I first shared the recipe for this soup, I definitely didn’t take pictures of it well enough to make you want to reach for a spoon and eat it. So, I thought I would try again and add it to our throw back thursday series.

Thai butternut squash soup is my favorite fall soup. It is creamy squash without the usual sweetness.

Thai Butternut Squash Soup

Did you know that I am a food contributor for Sugar Bee Crafts?  Each month, I share a new recipe over on Mandy’s blog.

A few months ago, I shared one of my favorite soups and I wanted to share it here with you today.  With super cold days, I really love how soup can instantly warm you up.

Some days I turn to the traditional but others, I like to go a little outside the box.

That’s how I started making spicy Thai butternut squash soup. It has all the creaminess and warmth of soup but with some new flavors you might not associate with a traditional squash soup.
